Enchiladas
Enchiladas Recipe
Ingredients:
- 8 tortillas
- 2 cups shredded chicken
- 1 cup grated cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup chopped cilantro
- 1 jalapeno, sliced (optional)
- 1 cup enchilada sauce
- 1/2 cup sour cream
Instructions:
- Preheat the oven to 350°F (180°C).
- In a skillet, heat a small amount of oil over medium heat. Add the onions and bell peppers. Sauté until they are tender and slightly caramelized.
- Add the shredded chicken, cilantro, and jalapeno (if using). Sauté for another few minutes until everything is well combined.
- Warm up the tortillas in a dry skillet or microwave for a few seconds to make them more pliable.
- Spread a small amount of enchilada sauce onto the bottom of a baking dish.
- Place a spoonful of the chicken mixture onto the center of each tortilla. Roll them up tightly and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas.
- Sprinkle grated cheese on top.
- Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes.
- Serve the enchiladas with a dollop of sour cream on top.
