Vego poké bowl
Vego Poké Bowl Recipe
Ingredients:
- 2 cups of cooked sushi rice
- 1 cup of cubed tofu
- 1 avocado, sliced
- 1 cup of edamame beans
- 1 carrot, julienned
- 1 cucumber, sliced
- 1/4 cup of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey or maple syrup
- Sesame seeds for garnish
Instructions:
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, and honey/maple syrup to make the dressing.
- In a large mixing bowl, combine the cooked sushi rice, cubed tofu, avocado slices, edamame beans, carrot, and cucumber.
- Pour the dressing over the ingredients in the mixing bowl and gently toss until everything is coated.
- Divide the mixture into serving bowls and sprinkle with sesame seeds for garnish.
- Your delicious vego poké bowls are now ready to be enjoyed!
Note: You can customize your vego poké bowl by adding additional toppings such as seaweed, pickled ginger, or sliced radishes. Feel free to experiment and make it your own!
